Epic Games has officially ported the Unreal Engine 3, the game engine powering the popular games like Bioshock, Gears of War, and Unreal Tournament 3. The engine requires OpenGL, so it will only run on the 3rd generation iPod touch and iPhone 3GS. Epic Games says they plan to make the engine available for licensing to companies who want to make or port games to the iPhone and iPod touch at some point.
