Alright dude if you get your iPhone and have firmware version 1.1.1 (settings->general->about)
then you are in luck all you have to do is visit jailbreakme.com on your iPhone and then read the instructions on the bottom of the page and click install (it will be a faster procedure with wifi) after safari should crash and them you should be back at the home screen wait a tiny bit and there should be a little progress block that indicates everything that is happening, if you do not get the little box then keep visiting that website until it works
-this will help you get installer (you practically won't need your comp except for NES)
for the changing backgrounds you must first install bsd subsystem and then summerboard (which is the program that changes the background) after you can install the many themes made for summerboard (oren is bomb!)
as for ringtones you can download sendsong which not only lets you send songs via email but also you can send them to your ringtones and they will he whole songs
-as for the nes roms you are on your own I do not know how to transfer them with a mac computer (btw for roms the best place is www.theoldcomputer.com)

I'm getting an iPhone in December and I've been preparing just like you. I found a web site that gives step-by step instructions for setting up the NES emulator
from your Mac. http://www.hacktheiphone.com/112/iphone_nintendo_mac.html

As the guy from the previous post said, get your ROMs from theoldcomputer.com

I hope this helps.
