I use a SIM card from an old AT&T phone. I don't pay for EDGE service or YouTube or any of that, I originally activated my iPhone with iASign (tutorial: http://www.hacktheiphone.com/iphone_using_cingular_for_intel_mac.html)
So, is this method working? Or should I hold off on updating? Thanks :)

I have been corresponding with mark (hackmyiphone.com) about this exact question - he just confirmed that he was able to use the latest version of independence to achieve this result.
(that is to say, his 1.1.1 iphone is now fully functional AND able to make calls with his non-iphone Cingular SIM card)
See his latest post (19:17 Oct 15th) about this:

it sounds like a tutorial is on its way this evening.
woo hoo!!!

I started out with a LOCKED iphone running firmware 1.0.1 (locked, but activated via iasign to allow calls with a cingular SIM that is NOT an iphone account as far as AT&T is concerned)
I carefully followed the steps described in the Help menu of Independence v1.2.3
30 minutes later, I can make calls on a fully functional v.1.1.1 iphone, still using that same cingular SIM.
