hacking question

i got my iphone, but im waiting for my credit card to arrive at my house in the mail before i activate it, set up an itunes account, etc. so can i hack my phone so that i can use the ipod and everything other than the phone, then restore it later when my card gets to my house so i can activate it? will i be able to use the same sim card, will all the features still be available? how do i restore the phone after my credit card gets to my house?

i know that i <i>can</i> bypass activation, i just want to know how i can restore my iPhone to the state that i bought it in. And i want to make sure that everything will still work after restoring it.
